I am not a great cook, and I am also not a fan of processed food. So when I feed my family, I try to use real ingredients and real food as much as possible. This is a collection of my favourite recipes that are quick, easy and very difficult to stuff up! Most of them are fast, healthy & delicious...the dinner trifecta.

Dongella's Shepherd's Pie

Get This -
500g beef mince
1 tablespoon olive oil
1 onion chopped
clove of garlic
2 teaspoons mixed herbs
1.5 cups of beef stock
1 cup frozen peas
1 grated carrot
1 grated zucchini
1 tablespoon Worcestershire sauce
1/2 cup grated cheese
1 tablespoon butter
3 potatoes
Do This -
- Heat Oil in a large frypan, Saute onion and garlic, add mince and cook until brown.
- Add tomato paste, beef stock, mixed herbs, sauce, peas, carrot and zucchini, mix thoroughly and simmer until liquid is absorbed.
- Meanwhile boil potatoes until soft. Mash with butter.
- Place mince mixture in a casserole dish, top with mashed potatoes.
- Sprinkle with cheese and bake in a hot oven for 20 minutes or until cheese has melted and is lightly brown.
- Enjoy!

Julie Goodwin's Cheesy Tuna Pies

Serves 4
Prep time - 10 minutes
Cooking time - 25 minutes
Get This -
1 x 375g packet macaroni
50g butter
1 medium carrot, diced small
1 x 375g packet macaroni

1 medium carrot, diced small
1 brown onion, diced
1 cup frozen baby peas
1 tin corn kernels
1/4 cup plain flour
1 1/2 cups milk
2 tablespoons Dijon mustard
1 cup grated tasty cheese
425g tin tuna in brine, drained
1/4 teaspoon salt
1/4 teaspoon ground white pepper
1 cup fresh bread crumbs
Olive oil spray
Do This -
1. Preheat oven to 200 degrees Celsius (180 degrees Celsius fan forced).
2. In a large pot of rapidly boiling, salted water, cook the pasta to packet directions. Drain.
3. In a large pot over medium heat, melt the butter and add the carrot and onion. Saute gently until the carrots are soft. Add the peas and corn.
4. Sprinkle in the flour and stir to coat all the vegetables well.
5. Pour in 1/2 cup milk and stir until it is all incorporated and starting to form a thick, doughy sauce. Add another half a cup and repeat. Add the last of the milk and cook for a minute more, stirring.
6. Toss in the mustard and cheese and stir until the cheese has melted. Add the tuna; break up any huge lumps but don't stir too much after this or the tuna will disintegrate and become mushy. Taste and season with salt and pepper.
7. Stir the pasta gently through and divide between 4 ramekins or small pie dishes. Sprinkle breadcrumbs over the top and give a little spray of olive oil.
8. Bake for 15 minutes or until the top is golden brown and crunchy.

Mini Lime Meringue Pies
Still trying to use up the limes from our tree, I came up with this idea.
Bake in 180C oven for 10 - 15 mins.
Top with meringue -
Use an electric beater to beat 2 egg whites until stiff peaks form. Gradually add 1/2 cup (115g) caster sugar beating until sugar has dissolved and mixture is glossy. Roughly spread over top of lime filling. Bake for 3-5 minutes.
Makes 24 mini pies.
I filled store bought mini pie cases with
the lemon filling (which I changed to lime) from Liz's recipe -
Beat 2 eggs & mix with a tin of condensed milk and the juice from 2 limes.
