I am not a great cook, and I am also not a fan of processed food. So when I feed my family, I try to use real ingredients and real food as much as possible. This is a collection of my favourite recipes that are quick, easy and very difficult to stuff up! Most of them are fast, healthy & delicious...the dinner trifecta.

Tomato & Avocado Salad
Get This -
1 large tomato, diced
1 avocado, diced
1/2 onion, diced
feta
fresh herbs (parsley/dill/coriander/basil/chives)
1 tablespoon lemon juice
1 tablespoon olive oil
salt & pepper to taste
Do This -
Mix together and enjoy!

Avocado Salsa
Get This -
avocado
red onion
cherry tomatoes
capsicum
canned corn
chilli
fresh coriander
lime juice
red wine vinegar
tabasco sauce
salt & pepper
Do This -
- Chop and mix ingredients together to taste.

Chicken Enchiladas with Beans
Serves 4
Get This -
1 tablespoon olive oil
500g chicken breast fillet or chopped barbecue chicken
10 enchilada tortillas or corn Mountain Bread
450g can refried beans
3/4 cup grated tasty cheese
375g jar chunky tomato salsa
avocado
sour cream
Do This -
- Preheat oven to 200°C. Heat oil in a frying pan over medium heat. Cook chicken for 4 minutes each side, or until cooked through. Stand for 10 minutes.
- Meanwhile, heat tortillas using packet directions.
- Slice chicken and put back into the frying pan with the refried beans. Stir until warmed through.
- Place chicken and bean mixture onto each tortilla. Top with a little cheese. Roll up tightly to secure. Place onto a greased and lined baking tray.
- Spoon salsa down centre of enchiladas. Sprinkle with remaining cheese. Bake for 18 to 20 minutes, or until heated through.
- Serve with avocado and sour cream.
Also serve with a side salad of rocket, cherry tomatoes & red onion if you wish.

Chilli Con Carne
Serves 2 - 3
Get This -
250g mince
1/2 medium onion
1 can diced tomatoes
1 can red Mexican Chilli beans
salt, pepper & chilli flakes to season
avocado or guacamole, sour cream and coriander or spring onions to serve
Do This -
- Saute onion until soft.
- Add mince and stir until browned.
- Add tomatoes and can of beans.
- Season to taste with salt, pepper & chilli flakes.
- Mix well and simmer for 10 - 15 mins.
- Serve with rice, pasta, tacos or jacket potatoes.
- Add avocado or guacamole and a dollop of sour cream on top.
- Finish off with some fresh coriander or sliced spring onions.
This one is almost too easy, that's why I love it! :)

Chicken BLT Salad
I love salads on a Summer night.
This one is perfect!!
Serves 4
Get This -
Olive oil
500g single chicken breast fillets
4 lean bacon rashers, excess fat trimmed, cut into thirds
2 baby cos lettuces, leaves separated, washed, dried
2 vine-ripened tomatoes, thickly sliced
1 avocado, halved, stone removed, peeled, thinly sliced
4 boiled eggs
caesar salad dressing
Do This -

Get This -
Olive oil
500g single chicken breast fillets
4 lean bacon rashers, excess fat trimmed, cut into thirds
2 baby cos lettuces, leaves separated, washed, dried
2 vine-ripened tomatoes, thickly sliced
1 avocado, halved, stone removed, peeled, thinly sliced
4 boiled eggs
caesar salad dressing
- Heat oil in a large non-stick frying pan. Season both sides of the chicken with salt and pepper. Add to the pan and cook for 3 minutes each side or until well browned. Thickly slice the chicken across the grain.
- Add the bacon to the pan and cook for 4 minutes or until crisp.
- Remove the bacon and place chicken back into the pan. Stir until cooked well all through.
- Divide the lettuce, tomato, avocado, chicken and bacon among serving bowls. Drizzle dressing over the top. Finish with a boiled egg cut in half.
