Chunky Beef with Beans and Chilli

Serves 4

Get This -

1 tablespoon olive oil
400g can chopped tomatoes
300ml bottled chunky chargrilled salsa
500g lean beef stir-fry strips
2 tablespoons chopped fresh coriander
1 red capsicum, seeds removed, coarsely chopped
400g can red kidney beans, rinsed and drained
1 onion, sliced


Do This -


  1. Heat oil in a large frying pan, add onion and red capsicum and cook over medium heat for 5 minutes or until golden. Add beef and cook, stirring, until browned.
  2. Add salsa, tomatoes and kidney beans, and simmer for 10 minutes. Stir in coriander and season with salt and pepper.
  3. Serve in bowls, topped with a generous dollop of yoghurt.

Leftover Sausage Chilli

I had some leftover sausages from dinner last night and I was going to make my Sausage Pasta Bake for dinner tonight. But I just didn't feel like pasta. I'm trying to cut down on carbs. And I know rice is carbs too, but I always feel better after eating rice than I do after eating pasta...don't know why...

So I made this instead.



Serves 4

Get This -
  • 1 tablespoon olive oil
  • 1 medium brown onion, chopped
  • 1 medium red capsicum, chopped
  • 1 medium zucchini, quartered lengthways, chopped
  • 2 teaspoons ground cumin seeds
  • 2 teaspoons ground coriander seeds
  • 1/4 teaspoon dried oregano leaves
  • 1 beef stock cube
  • 1/2 cup frozen corn kernels
  • small jar of hot salsa (or mild if you prefer)
  • can diced tomatoes
  • can four bean mix, drained, rinsed
  • 4 cooked thick beef sausages, thinly sliced
  • Fresh coriander leaves, sour cream, avocado and steamed rice, to serve

Do This -
  1. Heat oil in a frying pan over medium-high heat. Add onion, capsicum and zucchini. Cook, stirring, for 3 to 5 minutes or until vegetables are just tender. Add ground cumin, ground coriander and oregano. Cook, stirring, for 1 minute or until fragrant.
  2. Stir in tomatoes, salsa and stock cube. Bring to a simmer. Add corn, beans and sausages. Simmer for 7 to 10 minutes or until sausages are heated through. Top with coriander, sour cream and avocado. Serve with rice.

Four Bean Soup with Barley & Lentils

I found this recipe on Taste.com.au ...the best recipe website!
I added red lentils and salt & pepper, swapped the parsley for basil because I love basil and we happen to have a big pot of it in the garden.

Get This (serves 4)

  • 1 tb olive oil
  • 1 onion, roughly chopped
  • 3 garlic cloves, sliced
  • 1 celery stalk, roughly chopped
  • 1 carrot, roughly chopped
  • 3 thyme sprigs
  • 1/2 cup (105g) pearl barley
  • 1/3 cup red lentils
  • 2 cups (500ml) salt-reduced vegetable stock
  • 2 x 400g cans four-bean mix, rinsed, drained
  • 400g can chopped tomatoes
  • salt & pepper
  • 1/2 cup chopped fresh basil

Do This

  1. Heat the oil in a large, deep saucepan over low heat. Add the onion, garlic, celery, carrot and thyme, and cook, stirring, for 8-10 minutes until onion is soft. Add the barley and stir to coat in the onion mixture. Add the vegetable stock and 1 litre (4 cups) water, then bring to the boil. Reduce heat to medium-low and simmer for 20 minutes or until barley is slightly tender.
  2. Add the beans, lentils and tomato, and stir to combine. Season to taste with salt & pepper. Bring back to a simmer and cook for a further 15 minutes or until barley and lentils are soft. Serve in bowls sprinkled with basil.

Meatless Burritos

We are attempting to eat less meat by having a couple of meat free dinners a week.
So last week I tweaked a couple of favourite dinners into meat free versions.

The first one was burritos which we have usually once a week with chicken or mince.

Last week I made them this way...

Get This -

Burrito kit
can four (or five from Aldi) beans
tomatoes
onion
lettuce
cheese
sour cream or plain yogurt

Do This -

Fry chopped onion and tomatoes in small amount of oil
Add drained beans
Stir in sachet of burrito mix with water
Heat burrito wraps as per directions on the box
Roll up bean mix, cheese, salad, sauce and sour cream.

We didn't even miss the meat!

Bean Salad

I love cold salads in Summer.  This one is particularly yummy!

Serves 4

Get this -

430g can three-bean mix, rinsed, drained
1/2 small red onion, sliced very thinly
1 punnet cherry or grape tomatoes, halved

1/2 cup chopped fresh coriander
1 large lemon, juiced
Salt & freshly ground black pepper


Do this -

Place the beans, onion, tomatoes and coriander in a medium bowl. Add the lemon juice, season with salt and pepper, and toss to combine.
