Beef Sausage Rolls

I've never attempted to make sausage rolls before and was surprised at how easy they were.  If they are easy enough for me, they are easy enough for anyone.  Give them a go...

Get This -

300g beef mince
1 small brown onion finely chopped
1 carrot, peeled and grated
1 egg, lightly beaten
1/2 teaspoon dried herbs
1/2 teaspoon ground black pepper
1/2 teaspoon salt
2 sheets frozen puff pastry, partially thawed
1 tablespoon milk

Do This -

Preheat oven to 220C.
Line baking tray with baking paper.
Combine mince, onion,  carrot, egg, herbs, salt and pepper in a bowl and mix well.
Cut pastry sheets in half.
Shape a quarter of the mince along a long edge of each piece of pastry.
Roll pastry to enclose mince mixture.
With seam side down, cut each roll into four.
Place onto baking tray, brush with milk, and bake for 20 - 30 minutes until puffed and golden brown.
Let stand for 5 minutes before serving, with tomato sauce of course!

Pizza Puff Slice

This was a lovely, light meal. Perfect for a warm evening.

Serves -

Get this:

2 sheets puff pastry, thawed
2 tablespoons milk
2 tablespoons tomato paste
6-8 slices leg ham
1 red capsicum finely sliced
1 red onion finely sliced
1 cup mozzarella, grated
12 baby bocconcini

Do this:


Preheat oven to 200degC and line 2 oven trays with baking paper. Place pastry sheets on trays, pierce all over with a fork, then brush milk around the edges of the pastry.
(I didn't have a pastry brush so used rolled up baking paper & cut the end to form 'bristles'...clever, I know!)

Spread tomato paste over pastry sheets, leaving a 1cm border around the edge. Cut ham into strips and arrange on top. Scatter over the capsicum and onion, then top with mozzarella and torn bocconcini. Fold the 1cm edge of pastry to form a lip and brush with milk.

Bake for 15-20mins until crisp and golden brown. Cut each into quarters to serve.


Serve with salad of rocket, cherry tomatoes, capsicum & more bocconcini drizzled with virgin olive oil.

TIPS
You could add olives and/or replace the bocconcini with crumbled fetta.
You could also top with roughly chopped parsley if you like it. I don't, so I didn't.

Tuna Rissoles/Patties/Balls/Cakes



Makes 10 small balls

Get This:

1 small can tuna
1 small can flavoured tuna (my favourite is sun dried tomato & basil)
1/4 brown onion finely chopped
1 egg
breadcrumbs
1 tbsp sweet chilli sauce
salt & pepper
flour to coat
oil to shallow fry

Do This:
  • Put drained tuna, onion, egg, sauce, salt & pepper in a mixing bowl.
  • Add enough breadcrumbs so that the mixture holds together.
  • Mix well with your hands (remember to remove rings!!).
  • Roll into whatever size you like.
  • Coat in flour.
  • Shallow fry until golden brown all over.

OPTIONS
  • onion can be grated (although it tends to turn into mush) or fried lightly first.
  • add grated carrot, grated zucchini, frozen corn, fresh herbs or peas if you want to sneak some vegies into non-vegie eaters.
